{Hoppin' John}

3 strips of bacon, cooked and crumbled
2 cans of black eye peas
1 can of stewed tomatoes
onion, as much as you like
bell pepper, as much as you like
frozen corn
frozen okra
1-2 pinches of brown sugar
black pepper to taste
1/2-1 T. Texas Pete, Louisiana, Tabasco 
or you favorite hot sauce:)

Cook bacon in a large skillet. Once you have cooked your bacon, remove and drain on paper towel. Saute onion and peppers in bacon drippings until veggies are tender. Dump remaining ingredients in skillet, including crumbled bacon. Cover and simmer for about 15 minutes. Serve over rice!
